New Archangel Smoked Seafood uses only troll caught Wild Alaskan Silver Salmon. Troll caught Alaskan Salmon offers a distinct advantage. Each wild fish is caught by hook and line and handled individually. Upon landing, each fish is carefully stunned, bled and packed in ice to maintain the highest quality fillets. With icing as the most important factor, bleeding becomes the second most influential quality preservation technique.
Many other species of Salmon are "net" caught. Bruising and poor storage temperature control can effect overall quality. Net caught Salmon are also sold "in the round", or uncleaned. Net caught fish are not cleaned until they are finally delivered to the processor. That delivery can take hours or sometimes days, thus, the fish are not bled until long after they have died. Blood retained in the flesh results in a much lower quality fillet.
A fillet that is to be displayed whole has to be treated with "kid gloves" beginning with the landing and continuing through the entire smoking process. New Archangel Smoked Seafood prepares all fillets by hand and monitors each process closely to deliver the finest quality Smoked Salmon Whole Smoked Fillet available.
